Did Someone Say Snack?

Is there an easier, faster, more delicious food to cook for dinner than scallops? A little bit of no sodium chicken broth (or butter if you’re feeling naughty), a sprinkle of salt, some garlic and in less than ten minutes, you’re set. And best of all, they are amazingly nutritious. Low calorie, high protein and a good source of omega 3 fatty acids. All the good stuff!

For a change tonight, I decided to try this recipe from Canadian Living and it was FANTASTIC. Take my word for it, you need to make this right now. http://www.canadianliving.com/food/seared_scallops_with_bacony_brussels_sprouts.php

Threw together a salad with some spring mix and peaches and BOOM. Dinner on the table in 25 minutes.

And speed was key tonight my friends because I had big plans to finish prepping for the road trip. Pulled out all the nuts and dried fruit and made individual snack bags to discourage the mindless eating that can happen when you’re driving for hours on end. Of course this resulted in some sampling, but no-one’s perfect!

Looks like everything is coming together. I have one more night to obsess over details. I wonder if there are any other Yelp reviews I can look up?
