What I Made This Week!

This is the first of what I hope will turn into a regular posting series called “What I Made This Week” (yeah, the title needs work).  It will be a collection of recipes from my head and around the web.  I try to cook something new at least once a week since it’s so easy to fall back on a piece of grilled protein, steamed veggies and salad for dinner. As much as I love that combo, it can get a little monotonous.

One of my favourite recipe sites is http://paleomg.com. It’s worth checking out even if you don’t follow the Paleo diet. My first experiment this week: http://paleomg.com/spaghetti-squash-crusted-quiche/

I did alter the recipe slightly – I used extra lean ground turkey in place of the sausage, three egg whites and three whole eggs and only used half a spaghetti squash.  I also cooked the turkey in salsa to give it an extra kick.  Served it with just a simple mixed green salad on the side.  Verdict: complete hit!

My second experiment was born out of a need to get dinner on the table in less than half an hour. I had half a spaghetti squash, some tofu and very little else in the fridge. I reheated the squash strands in a frying pan (don’t add any liquid to the pan or it will get really soft).  Once it was heated through, I added in some chopped chard and my homemade tomato sauce. Again, you don’t want the squash to get mushy, so I would recommend cooking your sauce in a separate pan then adding it to the squash/chard mix for just a minute or two before serving. For protein, I grilled the tofu sprinkled with garlic and chipotle seasoning mix for just a couple minutes each side. Verdict: another home run!
