Peanut Butter Cookies. ‘Nuff Said.

Peanut butter cookies. I adore them. They taste of indulgence in every delicious bite. Over the years, I’ve tried to find/create “healthier” recipes and finally came up with this one which takes out every non-essential ingredient and leaves nothing but the good stuff.


  • one cup natural peanut butter (please don’t use the processed stuff)
  • one whole egg
  • 1/2 to one cup of sugar (to taste)
  • chocolate chips, nuts, dried fruit (all optional and all to taste)

Note: if you want peanut butter oatmeal cookies, add some UNCOOKED quick cooking oats to the batter.

Pre-heat oven to 375 degrees.  Combine all of the peanut butter and a 1/2 cup of the sugar. Continue adding sugar to taste up to one cup.  I personally don’t like super sweet cookies so I’m usually good around 1/2 to 3/4 of a cup.  Once you have the sweetness set, add in the egg.  Stir to combine and add your optional mix-ins.

Roll into individual balls and place on a parchment paper covered baking sheet. Press each ball into little discs. Cook for 15-18 minutes. Start checking them around the 12 minute mark.  No-one likes a burnt peanut butter cookie.

BOOM! You’re done…all you have to do now is enjoy them. Try not to eat them all in one sitting. And if you do, just tell yourself that since they’re excellent sources of protein and healthy fats, they’re practically good for you.
