Super Snacks!

January 29, 2014

It’s almost the weekend and you know what that means…Super Bowl! Seems like almost everyone will be at a SB party on Sunday, if not to watch the game, then to eat the food. If you want to indulge without consuming way more than is healthy in salt, fat and calories you’re going to have to take matters into your own hands.

Here are some easy swaps that won’t leave you feeling like you’re missing out:

  • Switch out ground beef for lean ground turkey in chili.  I’ve been doing this one for years. It’s so easy and no-one seems to notice the difference.
  • Buy chicken drumsticks and marinate them in a dijon mustard/honey mix for a few hours. Bake them in the oven for a great replacement for chicken wings.
  • Instead of fries, slice up some sweet potatoes, toss in a bit of EVOO and rosemary and bake in the oven until crispy.
  • Craving chips? Try cutting up veggies – carrots, zucchini and beets work well – toss them in EVOO and a bit of salt and/or garlic and bake until crispy.  This works best if you have a mandolin or food processor to slice the veggies very thinly into potato chip format.
  • Pizza is a tough one, but you can tweak it by making/ordering thin crust, going VERY light on the cheese and topping it with chicken and roasted veggies (think eggplant, peppers, broccoli etc).
  • Sweet tooth? Stir up some Greek yogurt with honey and berries then freeze for ice cream or go the easy route and buy frozen yogurt bars (read those nutrition labels though!)

There you have it! Nothing earth shattering, but little changes make a big difference. Enjoy the game AND the food!
