Easy Pulled Pork

Superbowl Sunday is upon us! I won’t be watching Superbowl this year (the party I usually attend isn’t happening) but I’ve decided to forge ahead with my plans for pulled pork to go along with some healthier snacking options.

If pulled pork sounds like something you can get behind, then keep reading. This is one of those “throw it in and see what it tastes like” successes that I’ve used a few times


  • 1 pork loin (salted and peppered)
  • 1 shallot or small onion (diced)
  • 2 cloves of garlic (diced)
  • Low or no sodium beef broth
  • Salsa
  • Cayenne pepper

Set you crockpot on low. Pour in a generous amount of beef broth – maybe about a cup? Throw in the shallot and garlic, then add the pork loin and sprinkle a bit of cayenne on top of it. Add a few heaping spoonfuls of salsa directly on top and around the loin. Cover and walk away for four or five hours. Test doneness by trying to shred the pork with a couple of forks. If it shreds easily, pull it apart, mix it with the juices, turn the crockpot to “keep warm” and leave it until you’re ready to eat. Otherwise let it cook a bit longer then test again.

Note: If you’re looking to increase the nutritional value, try adding some kidney beans for added protein and fibre. Not “traditional” by any means but still delicious! They also give it a bit of a chili feel which is good since I’m serving it with sweet potato “chips” for a take off on nachos.
