Lazy Monday Dinner

My ultimate Monday throw-together meal is always extra lean ground chicken or turkey cooked with a veggie or two and a leafy green in one big pan. If you’re like me and just want to curl up on the couch after a long day in the office, you’ll love how easy this is while remaining great for you.

The perfect veggies for this no effort dish:

  • Cauliflower
  • Broccoli
  • Sweet Potato
  • Sweet Pepper
  • Mushrooms
  • Butternut Squash
  • Brussel Sprouts

And the leafy greens:

  • Kale (works best)
  • Swiss Chard
  • Spinach

Brown your ground bird with whatever seasonings you desire. Drain off the excess fat then add one or two veggies from the list above. Make sure you cut them into small pieces to speed the cooking time. Once the veggies are just about done, add one leafy green and stir until wilted. If you want to go the extra mile and add diced tomatoes or salsa and simmer for a few minutes, even better!

I know this doesn’t sound like much, and it isn’t something you want to make when you’re out to impress, but let me tell you, it’s comfort in a bowl. Eat it in your pjs while you’re curled up on the couch pretending the outside world doesn’t exist.
