Superfood Salad

I tried THIS recipe from Canadian Living tonight. It sounded so promising but I was a bit disappointed in the end result. My main problems with it surrounded the flavour (kind of bland) and the texture (mostly mushy). That being said, there was enough there that I would try making it again with a few tweaks.

  • Change out the veggie broth with chicken broth (obviously this would not apply if you wanted to keep this a vegetarian dish)
  • Toss the chickpeas in olive oil and cayenne pepper, roast them in the oven and add to the veggie mixture just before serving.
  • Use raw almond pieces in place of the toasted almond slices.
  • Maybe toss with a bit of balsamic just before serving for a bit of bite.

The nutritional numbers on this one are off the charts – low sodium, high in potassium, iron and Vitamins A and C. Definitely worth a second shot. Let me know in the comments if you try it (with or without my tweaks) and what you think!
