Yummy Roast Pork

It’s Friday and I’m too tired to do anything other than cook this roast pork recipe and bag out on the couch. Probably has something to do with being in training all week at work AND waking up at 5am this morning even though it was my rest day. I finally got up just before 6, but stayed strong and didn’t go to the gym.  Read the paper on-line, had a protein shake and got ready very, very slowly instead. It was kind of nice taking my time but I’m paying for it now.

Anyway, the pork! Unlike the Superfood Salad recipe from the other day, this one was fantastic. The only thing I changed was boiling the sweet potatoes for a few minutes before adding them to the pork pan and NOT cooking them and the veggies in that chicken broth/water mix.  That sounded like it had the potential to be a mushy vegetable disaster. Instead I just sauteed everything in the oil left over from browning the pork.

A side note on the yogurt sauce: It was getting the side eye from me but was actually delicious.  A little goes a long way though, so don’t feel like you have to pile it on your plate.  A couple of tablespoons used as a dip is all you need.

This is one I’ll definitely make again. It was quick and easy which was perfect for tonight. Now I have plenty of time to rest up for my long run tomorrow morning. Happy Friday!
