Stuffed Turkey Fillets

Oh have I got one for you tonight! It’s not exactly clean but it is delicious and not too horrible for you. Besides, a little comfort food to celebrate the end of Monday is never a bad thing!


  • 1 package turkey fillets
  • 4 or 5 strips of bacon
  • Handful of shiitake mushrooms, diced
  • Favourite poultry spice mix (I used Blue Menu Lemon & Herb)

Cook bacon to how you like it, remove from the pan, pat with paper towels, dice and put in a small bowl. In the same pan, add the diced mushrooms and cook them down. Remove when soft and add to the bacon. Stir that around to mix well.

Now season your turkey fillets on both sides. Lay them out, add a spoonful of the mixture to the middle of each fillet and roll up each side.  Tie with a small piece of butcher’s string. From here it’s up to you how to cook them. You can either cook them in the pan or bake them in the oven.

Pan: Wipe the excess bacon grease out of the pan and add some chicken broth. Cook on medium for about 15 minutes, turning once through the process.
Oven: Place in a baking dish and bake for about 20 minutes at 375 degrees.

Note that my fillets were quite thin…cooking times may vary!

I paired mine with some roasted asparagus spears but pretty much any veggie side dish would be good. Just make sure to keep it on the lighter side to balance out the bacon. Enjoy!

    Mmmm….asparagus….mmmmm. I love how asparagus just get soooooo caramelized!
