Veggie Soup!

This recipe courtesy FitSugar is quite possibly the best vegetable soup I’ve had. Creamy without containing cream, low sodium and high in fibre. I thought it was strange that it didn’t have any seasonings listed (not even salt/pepper), but I decided to trust the recipe and it turned out fabulously. It’s quick and easy to make too – you’ll have dinner on the table in about half an hour.

Take a look at the nutrition info after the recipe…90 calories per serving and it makes four servings. Ian and I split a batch which still only clocked in at 180 calories for 9 grams of fibre and 8 of protein. Neither of us can live on 180 calories in the evening, especially since Ian works out before dinner, so we beefed it up with some leftover meatballs on the side. Honestly, those probably weren’t the best accompaniment, but they were quick and needed to be eaten. I’d recommend it as a side to a really nice piece of fish for dinner or as a main dish for lunch.

    Ohh … I just made some soup with sweet potatoes ( and carrots) … so I know that works well. The one you linked to … mmmm….the kale and garlic must give it the flavors so you don’t have to add spices I bet.

    kk … I am soooo gonna try this. I have been trying to figure out ways to get more veggies in the wifey…. ESPECIALLY green veggies … and she has been open to soups. Sooooo … YES!

    • Yup! I’m thinking the kale, garlic and sweet potato give it a little somethin’ somethin’, you know? Definitely try it out with your wife! Ian loved it and he’s not your typical pureed veggie soup eater. LOL
