Easy Broccoli “Pasta”

I just made something amazing. It was inspired by a post that I read on Fitsugar ages ago and can’t find now, but I swear you’ll love my version! I had this for lunch and it was pretty much a perfect portion. If you’re thinking of it for dinner, you might want to double the recipe and/or add some extra protein so you don’t go to bed starving.


  • 1 bag broccoli slaw (I use the PC brand)
  • 1 cup canned diced tomatoes
  • 1/2 cup ground chicken (totally optional – mine was leftover from last night’s dinner)
  • Italian spice to taste
  • Garlic powder to taste

If you’re having any kind of meat with this, cook it first. If you’re using leftovers, let them come to room temperature.

Start by warming your diced tomatoes in a frying pan and add both the Italian spice and garlic powder.  After a couple of minutes, add in about 1/4 of the bag of slaw which probably equals two to three cups.  Stir that around and let it cook down for about five minutes. If you’re adding in meat to the mix, do so now. Either way, cook for an additional five minutes and BOOM. You. Are. Done.

  2. What is broccoli slaw? Is it shredded?

    • Yes! It’s a variation on traditional coleslaw. The kind I use has broccoli, carrots and red cabbage.

      • I’ve never seen it before. We use carrots and apple in a type of coleslaw too.
