Kinda Sorta Coleslaw

I love race packet pick-up day! Digging through the bag, checking out the freebies and trying on the swag. It’s all so much fun. I also picked up a bag for one of my colleagues and am battling the temptation to take his peanut butter protein bar as “payment” but considering he may read this blog (hey Marvin!), it’s probably not a good idea.

I baked salmon for dinner along with a sweet potato EACH (carb loading!) and a salad that I threw together to use up some veggies, but ended up turning out fantastic. It has a bit of a coleslaw feel to it and I can see it becoming a summer mainstay. It might even be a good topping for burgers or hot dogs if you’re feeling adventurous.

Kinda Coleslaw Salad

  • Half head of cabbage, diced
  • One large carrot, grated
  • One large beet, grated
  • 4 large Boston lettuce leaves, de-ribbed and torn up (optional)

Pretty simple here. Add all ingredients to a bowl and mix together. Leave the Boston lettuce out if you want to maintain the coleslaw feel. BOOM. Salad. Done.

I’m not using dressing at the moment thanks to the Whole 30, but even if I wasn’t, I don’t think it really needs any. The flavours are very bright all on their own and don’t need “help”. That being said, if you want dressing, I’d recommend something vinegar based since the carrots and beets are so sweet.
