Your New Summer Salad

Full disclosure: I have not actually tried this salad. It comes to us via one of my very good friends who is a wonderful cook, so I have no doubt that it’s amazing. I’m making it on Sunday, but had to share it now because it just sounds so damn good.

Sicilian Blood Orange and Fennel Salad

  • 1 fennel bulb, thinly sliced or shaved
  • 2 blood oranges, peels removed, sectioned and each section cut in half
  • 1 small red onion, thinly sliced
  • 6 anchovies, minced
  • Handful black olives
  • EVOO
  • Lemon juice
  • Pepper (optional)
  • Parsley (optional)

Prepare all ingredients and put the fennel, oranges and onion into a bowl.  In a separate bowl, free pour the EVOO and lemon juice depending on how much dressing you want.  Once you have the mixture right, add in the anchovies then pour over the salad.  Toss well to combine. Throw in the black olives. Add in a bit of pepper and parsley if desired. Serve immediately.

You can change this recipe up by using grapefruit or regular oranges in place of the blood oranges. His recommendation was to serve this either with fish or bbq. Definitely getting a beautiful piece of fish for Sunday dinner and trying this one out!
